Robin's Recipes: Wharf Chilli Jam

This simple yet delicious recipe makes a versatile Chilli Jam with the perfect balance of sweet & sour flavours and a nice hit of chilli heat!

Wharf Chilli Jam:

Ingredients: 

  • 4 Red Peppers de-seeded & roughly chopped
  • 1 Red Onion chopped
  • 2 Sticks of Celery chopped
  • 6 Cloves Garlic chopped
  • 1 Tin plum tomatoes
  • 4 tbsp Balsamic vinegar
  • 2-4 Small red chillies (adjust the number of chillies to suit your palate)
  • 250ml Red or white wine vinegar
  • 50ml Harvey’s Wharf IPA
  • 350g Soft brown sugar
  • Splash of sunflower oil

Method: 

1. Gently fry the onions, celery and garlic in oil for 10 minutes
2. Put all ingredients (except the sugar) in a blender and blend to a coarse liquid
3. Place in a large pan, bring to a boil and stir in the sugar
4. Simmer over medium/high heat until thick, stirring often
5. Reduce the heat, and stir until very sticky
6. Spoon into sterilized jars, refrigerate and consume within 2-3 weeks

Serve with a glass of our Wharf IPA, crusty bread and cheese.
